    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • The sink near the back cook-line (facing the walk-in coolers) appears to have been repaired. Water is dispensed when the faucet is turned on, however, the water accumulates in the basin and takes a significant amount of time to drain (after 2 minutes, water was still in the basin, very slowly draining). PHI also noted a bucket beneath the piping of the sink. The operator also noted that the sink near the dishwasher seems to have the same problem - PHI tested the faucet (operational) and observed the same stagnation of water in the basin during drainage.Operator noted that a blockage of the drainage piping is suspected and that the piping leaks when the sink is used - the buckets catch this water.Please ensure that the sink and plumbing fixtures are in good operating condition.
