      • Observation: 1. Raw meat, such as frozen raw Baron beef roast and raw ground packages, are stored on top of ready to eat foods such as ice cream, Oreo muffins, beer and bags of blue berries. This can be found in the walk in beer cooler, chest freezers in the basement floor. This can be a source of cross contamination of pathogens leading to illness.
      • 2. Bags of food and supplies placed on the floor of beer walk in cooler. The floor is contaminated and food cannot be stored directly on the floor.
      • Corrective Action(s): Ensure all food products are protected from contamination. Store raw protein on dedicated areas below and away from ready to eat foods. Foods should be stored on food shelves at least 15 cm off the floor. Correction required today and this is a priority to prevent cross contamination of food.

      • Observation (CORRECTED DURING INSPECTION): Staff washroom required cleaning and servicing at the time of inspection. Toilet appears to be not working.
      • Corrective Action(s): Staff cleaned the washroom and toilet was in working order again.

      • Observation: Bar area hand sink has a hose bib extension. This hose bib may become contaminated with dirty water or waste water when washing hands and become a source of contamination.
      • Corrective Action(s): Ensure hose bib stays clean and short enough so it does not become contaminated by touching the bottom of the sink or remove the bib. All dedicated hand sinks must be free of contamination so staff can wash their hands adequately with liquid soap and dry with paper towels. Correction required today.

      • Observation (CORRECTED DURING INSPECTION): Use hydrogen peroxide as sanitizer in the food preparation area.
      • Please replace this sanitizer with food grade one ( such as bleach, quat, or iodine )
      • Glass washer need to be supplied with approved sanitizer, bleach, at minimum 50ppm measured at the glass surface
      • Corrective Action(s): Bleach will be purchased and available in spray bottles. Please ensure to mix the approved sanitizer and water every time when you are operating.
      • All glasses to be washed in the high temp dishwasher until bleach concentration is adjusted. Manager will call repair technician today. will follow up tomorrow.

      • Observation (CORRECTED DURING INSPECTION): Chlorine sanitizer concentration at the glasswasher was measured at 0 ppm. The operator was able to adjust the tubing to allow chlorine to be dispensed.
      • Corrective Action(s): Inspect the dishwasher prior to use to ensure chlorine sanitizer is being drawn through the tubes. Measure the chlorine concentration at least daily and keep an accurate log. Ensure the log is available on-site for review. Date to be completed by: Immediately

      • Corrective Action(s): Operator was able to repair glasswasher and it was reading 50ppm Cl during inspection.
      • Operator must keep a written log of glasswasher sanitizer reading to provide inspector during inspections.

      • Observation: Dust and debris on the ceiling vents, tiles, walls and light fixtures again
      • Corrective Action(s): This is an ongoing issue. Cleaning must be done of the above written items by March 14/18, correction order given
