      • French baguettes on sales floor were stored in undersized packaging with the tops of the baguettes sticking out.Food must be properly covered or packaged to prevent contamination.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Dishwasher in deli department measured 68 degrees Celsius.Service unit.Temperature measured at dish level must be at least 71 degrees Celsius.Staff should have a max registering dishwasher safe thermometer or some other method of checking dishwasher temperature at dish level.

      • Floor of walk-in bakery cooler is quite worn and rough and is no longer smooth and washableAll surfaces must be smooth, in good repair and easy to clean.

      • Lower walls (bumpers) in bakery department had a build-up of dirt / debris on surface.Clean noted areas. All areas must be clean and well maintained.
