    • 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
      • Observation: The high temperature dishwasher was 68C (at the plate's surface) during the rinse cycle, as per max/min thermometer. The temp gauge on the dishwasher was 177F during the rinse cycle. The dishes are not being sanitized during the rinse cycle as the temperature of the water is too low. Pathogens/germs will survive.
      • Corrective Action(s): Immediately call a company to maintenance/repair the dishwasher so the temperature of the water during the rinse cycle is >180F/82C at the manifold (temp gauge on the dishwasher) or is >160F/71C at the plate's surface. Immediately manually sanitize dishes in the 3-comp sink, with Quats, once they have been run through the dishwasher. During the inspection, a work order was placed to have the dishwasher repaired. Contact our office to schedule a follow-up inspection, once the dishwasher is fixed.

    • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: 1) The high temperature dishwasher has soap scum accumulated on the interior and exterior surfaces of the machine, and there is white residual found accumulating on parts of the machine. This could be an indication the machine is not operating properly and/or it is NOT being washed and cleaned on a daily basis.
      • 2) There is accumulated food and grease on the wall behind the cook station on on kickboards below tables and coolers. This will attract pests.
      • Corrective Action(s): 1) Call a professional company to service and clean the dishwasher, to ensure it is working as per manufacturer's specification (wash and rinse tempertures & times are being met).
      • **Correction date: Mar. 15/23**
      • 2) Wash and clean the mentioned areas to remove the food and grease. Increase the frequency these areas are washed and clean during the week.

      • Observation: There is tongs and a bucket "set-up" holding up a plastic grease tray below the oven to prevent it from leaking. The plastic grease tray is broken as it doesn't tightly seal and catch the grease. This causes grease to drip and pool on the floor, this will attract pests.
      • Corrective Action(s): Immediately replace the broken grease tray with one that is food grade, durable, cleanable, tight fitting, and prevents grease from leaking.
