      • - Observed a small pot of red sauce stored at room temperature. The internal temperature of the food measured at 33C; been at room temperature for less than 2 hours.
      • Corrective Action(s):
      • - The staff turned on the burner and reheated to 74C.
      • - Ensure the burner stays on to maintain the food at 60C or above at all times, otherwise keep it in the cooler to store food at 4C or below. This is to prevent potential pathogen growth.

      • Observation (CORRECTED DURING INSPECTION):
      • - Foods stored inside the prep cooler measured above 4C. Internal temperature of the feta cheese measured at 7C.
      • Corrective Action(s):
      • - Staff moved all the foods into a walk-in cooler maintained below 4C.

      • Observation (CORRECTED DURING INSPECTION):
      • 1. Surface sanitizer in a spray bottle used in the kitchen had high concentration of bleach (above 200 ppm chlorine).
      • 2. Missing surface sanitizer at the bar.
      • Corrective Action(s):
      • 1. Staff replenished the surface sanitizer at the time of inspection. It measured at 100 ppm chlorine.
      • - Monitor the concentration of the sanitizer by using a chlorine test strip.
      • 2. Staff placed a surface sanitizer spray bottle containing 100 ppm chlorine at the bar.

      • - Remove rodent droppings and disinfect the affected areas using bleach to keep the facility in a sanitary condition and to avoid pest attraction.

      • 1. Prep cooler measured at 6C. Thermometer was left in the cooler for 1 hour to measure the temperature.
      • 2. Missing ceiling panels above the walk-in freezer and above the shelving units at the entrance of the office.
      • 3. Protective covers for light fixtures were missing in the kitchen and dry storage area.
      • 4. Paint on the walls and shelving units in the walk-in freezer was wearing off.
      • Corrective Action(s):
      • 1. Repair the prep cooler.
      • - Do not store any potentially hazardous foods in the prep cooler until it is repaired.
      • - Continue to log temperatures for all cold holding units daily. Temperatures of the coolers were recorded only until September 18th, 2025.

      • -Underneath the dishwasher. Small pieces of insulation was also observed under the dishwasher.

      • Observation: Rodent droppings found in the following areas:
      • -Along the walls in the front bar
      • -On the first two shelves of the storage area
      • -Throughout the kitchen, mainly along the walls and on the first level of storage shelves.
      • One dead mouse was found in a trap next to the hot water tank.
      • A professional pest control company was onsite on September 25, 2024. Report reviewed during the inspection.
      • Corrective Action(s): 1) Clean the droppings as soon as possible with a bleach solution.
      • 2) Call a professional pest control company to do a full assessment and to identify all rodent entry points. Ensure that the entry points are sealed within two weeks and a report is provided.

      • 1) Move to pest proof containers with lids.
      • 2) Remove poison bait traps from the kitchen today.
      • 3) Move to another sink that is not used for food, such as the mop sink today.

      • Observation: Mouse droppings found in the following areas:
      • -Behind the ice machine in the bar.
      • -In the dry storage area (One dead mouse was found on a sticky trap).
      • -On the shelving underneath the bakery processing area.
      • Corrective Action(s): 1) Clean all droppings with a bleach solution today.
      • 2) Have a professional pest control company come onsite before Friday, June 28th.
      • 3) Follow their pest control recommendations.

      • Observation: The most recent pest control report identified several rodent entry points- seal all of them. A gap was noted under the back door.

      • 2) Check for and seal all rodent entry points with steel wool, door sweeps or an acceptable alternative by Friday, June 28th.
