Ensure that the flooring is repaired such that it is smooth, non-absorbent, and easily cleanable.2. Observed shelves in the rear hallway storage which were heavily bent and collapsed in the middle. The shelves were located as follows:- bottom shelf near the door of the main storage walk-in freezerEnsure that shelves are maintained in good condition.

      • Walk-in cooler fan covers in the following departments had a significant build up of debris and require cleaning:- Produce Department- Meat Department Ensure that the fan covers are cleaned on a regular basis. If needed, increase the frequency of cleaning.

      • Expired QUAT test stripes (July 1, 2024) were observed by the 3-compartment sink in the right side of the Deli Department. Ensure that staff have access to adequate test strips to measure sanitizer concentrations accurately.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • 1. There was a large build up of ice inside the main walk-in freezer located beside the Meat Department. Ensure the source of the ice build up is repaired and that any items contaminated by the ice is disposed of.2. The fan covers in the large Meat walk-in cooler have a build up of food debris. Ensure that the fan covers are cleaned on a regular basis.

      • 1. There was a large build up of ice inside the main walk-in freezer. The ice is located in the left corner, parallel to the door. Ensure the source of the ice build up is repaired and that any items contaminated by the ice is disposed of.2. There were multiple locations inside the main walk-in freezer where a build up of wood pieces, plastic wrap, and other debris was noted. Ensure that the build up is removed so that the unit can effectively be cleaned.

      • 1. A frozen turkey was stored above the fill line in a display cooler in front of bakery. Ensure that all high-risk food items requiring refrigeration are stored so that they are below 4C.2. Numerous containers of 10% Cream were observed on the floor in the corner of the dairy/egg walk-in cooler. Ensure all food items are stored above the ground.

      • The Quat test strips by the Produce 2-compartment sink expired on April 2023. Ensure that staff have access to satisfactory testing equipment to measure sanitizer concentrations.

      • A small pallet made of untreated wood was used as a platform to stack boxes off of the floor. The pallet has not been treated and can therefore absorb moisture. Staff removed the pallet during the inspection. Ensure that all pallets used as storage platforms are treated so they are smooth, non-absorbent, and easily cleanable.
