      • The sanitizer dispensed at the 3-compartment sink by the seafood department measured 400ppm quats. Staff was instructed to dilute all dispensed sanitizer to measure 200ppm quats until the dispenser is repaired, to add a rinse step after the sanitize step, or to use the sanitizer located in the deli area. Ensure sanitizer dispenser is repaired and sanitizer measures 200ppm quats.

      • The concentration of Quat sanitizer solution in a spray bottle at the bakery section was measured to be at 50ppm. A fresh 200ppm solution was prepared by the staff during inspection.Ensure the concentration of dispensed sanitizer solutions in spray bottles are monitored. Required 200ppm Quat concentration should be maintained at all times.

      • Portioning scoops for dry storage bins containing red band sour soothers and sliced almonds were placed inside the bins with the scoops handle touching the food items. A staff removed the scoops during inspection.Please implement a more frequent monitoring of the bins to ensure scoops for exposed food items are not stored directly on food.

      • 1. A light bulb in general walk-in freezer at the back did not appear to be shatter proof and was missing a protective cover. Please ensure the light fixtures are either shatter proof of supplied with a shatter proof protective cover.2. A light fixture in the bakery walk-in cooler was missing a protective cover. Replace the missing cover to prevent food contamination an event of breakage.

      • Handwashing sink was missing from produce department. Produce department dishwashing sink was converted to vegetable preparation sink. PHI Discussed that dishwashing would have to occur in meat or deli department. PHI also discussed that vegetables that require cutting would have to be done so in meat or deli department prior to transportation to produce prep sink unless hand sink be re-installed.
