    • F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
      • Observation(s): Please confirm re-calibration of the wall mounted dispenser for quaternary ammonia hard surface sanitizer to ensure mixing at 200-300ppm. Please confirm repair to sections of baseboard that were noted as missing or falling off at the time of inspection. Please confirm re-sealing of the lid on the back of kitchen grease interceptor to prevent sewer gasses from entering the kitchen (a smell was noted at the time of inspection and sections of previous calking were missing or no longer intact/providing a seal). As discussed at the time of inspection, recommend a long-term plan for proper repair to this lid/seals that does not require re-calking every time the grease interceptor is emptied.
