    • 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (a) the food establishment and equipment are maintained, cleaned and sanitized;
      • Better cleaning/organization required inside the truck. Large standup freezer requires defrost to remove large ice buildup.

      • While handwashing is not required in a Class 3 mobile, disposable gloves, hand sanitizer and surface sanitizer are. None of these items were readily available. Operator was able to obtain all 3 from the front of the truck during the inspection.
