    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The stand up cooler beside the fountain drink syrup corner was measured around 13C. Foods were ordered to remove.Repair and only use the cooler after the cooler is able to maintain 4C or lower.

    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • 1) The internal temperature of high-risk foods such as meats and seafood stored in the under-grill drawer unit were measured at approximately 10 degrees Celsius. - Food were relocated to another cooler. - All high-risk foods under refrigeration must be stored at a temperature of 4C or less at all time. - Do not use the cooler until it can maintain a temperature of 4C or less consistently. 2) High-risk foods such as cheddar cheese and raw shell eggs were left out in room temperature at the "The Turn" snack shop. Internal temperatures were measured at 24.6- 25 degrees Celsius. - Ensure all high-risk foods are store at a temperature 4C or less or greater than 60C at all times. - Raw shell eggs must be stored at a temperature of 7C or less. - Foods were discarded. 3) No temperature logs available. - Please implement and monitor the temperature of coolers and hot holding units regularly.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • No iodine test strips available on-site. Quat test strips were water damaged and expired.- Please purchase and verify the concentration of Quat sanitizer solutions and iodine during the sanitation cycle of the glasswasher. Quat sanitizers must be used at 200 ppm. Iodine concentrations must be between 12.5-25 ppm.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Some cleaning required at the 2-door upright cooler. Dried food debris observed on the outside of the sliding doors. - Please clean and maintain.
