- Observation(s): 1. NEW INFRACTION: Evidence of rodent activity in the facility. All entry points for rodents will need to be closed off with rodent-proof material (e.g. metal flashing, hardware-cloth wire mesh). 2. NOTE: Some rodents require a large amount of drinking water. Eliminate all drinking water sources for rodents in the facility; e.g. toilets, standing water in sinks, etc. Do not leave toilet seats up. 3. NOTE: Eliminate the food source for rodents. Ensure all food debris is removed from the floor and equipment at the end of the production day. 4. NOTE: Eliminate any potential rodent harbourage/nesting site inside the facility. Keep pallets and equipment away from warehouse walls so that traps can be set, and monitored, around the perimeter of all storage areas etc. Rotate stock to discourage rodents from establishing harbourage. 5. NOTE: Consult with a pest control company on rodent control. Inquire about using liquid baits or dry baits on the outside of the building for monitoring and control. For food safety purposes, use traps inside of the facility, and baits on the outside. Review the attached article regarding rodent control in food processing facilities.

- Observation(s): • Cover the intake air vent in the rear wall with a wire mesh screen to prevent mice from entering the facility this way. (NOTE Mice only need 1/4 inch opening for access). • Recommend using a 1/8 inch mesh screening to seal air intake opening (e.g. 1/8 inch hardware cloth). • Seal any holes in the ceiling at the wall-ceiling joint with coarse steel wool or other appropriate material. • Inspect the rear of the facility for any opening that may be possible entry points for mice. • Ensure that all warehoused items are stored on pallets etc. so that they can be easily moved to inhibit mice from having harbourage behind unmoved and stationary items. • To eliminate/reduce the issue, the food source for pests must be removed. Review cleanup and storage procedures to ensue that the food sources for pests are greatly reduced/eliminated.

- Observation(s): Obtain chlorine test strips to monitor chlorine sanitizer concentrations in the sanitizing sink and the spray bottles.

- Observation(s): a) There is evidence of mouse activity in the building ( mouse droppings and nesting). b) The operators must increase pest control measures to control rodents. Place more traps throughout the facility and monitor the traps regularly. c) All access holes in walls etc. (e.g. holes around pipes) need to be blocked so that mice do not have easy entry into the acility. Holes around pipes can be filled/blocked with coarse steel wool and larger holes should be blocked with metal flashing or drywall. Repair the large hole in the wall in the Girls Bathroom (evidence of rodent nesting activity in this wall void). d) Maintain the facility so that there are no harbourage areas for mice (i.e do nor allow clutter to accumulate, move/rotate stock frequently to disturb rodent harbourage/nesting. e) The facility has a pest control manual on site; refer to the manual and develop an ongoing rodent control program.

- Observation(s): a) The facility has expanded since initial opening/approval to include additional warehousing (adjacent warehouse) and fudge production.

- Observation(s): a) A Food Safety Plan must be developed for this food processing facility; information regarding food safety plans was provided to the operator at the time of this inspection. Please complete by January 31, 2017, advise Interior health when completed.
