      • 1) A probe thermometer was not available.Provide a probe thermometer that can measure between 0C to 100C.2) Chicken legs were thawing in standing water at the two-compartment sink. The surface temperature measured 9.6C.Thaw foods in one of the following ways: 1) under cold running water, 2) under refrigeration at 4C or less, 3) in a microwave, or 4) as part of the cooking process.

      • There was no hot running water at the hand sink in the meat cutting room. Water had a maximum temperature of 9C.Repair the hand sink and provide hot and cold running water.

      • There was tape over the floor drain by the two-compartment sink.Remove tape and install a proper floor drain cover.

      • The meat cutting room had acoustic ceiling tiles. A ceiling tile above the two-compartment sink was damaged.Replace with smooth and washable ceiling tiles in light colors.

      • 1) The sliding doors for the chicken display cooler were covered with duct tape.Remove tape and repair the equipment if necessary. 2) A hammer was being used as a locking mechanism for the meat grinder. The handle of the hammer was in a state of disrepair.Repair or replace equipment. Ensure it is in good working condition and can be cleaned and sanitized effectively.
