Inspection summary

Stock Yard Kitchen has been inspected 3 times by Alberta Health Services (Environmental Public Health) since June 18, 2026. The most recent inspection, on October 5, 2026, recorded 5 infractions.

2 of 3 inspections on record found no infractions at all. In the past 12 months there were 3 inspections with 5 infractions recorded. The higher-risk findings here relate to: Food temperature control, Cleaning and sanitizing and Pests.

What these findings mean

Health authorities word their violations differently, so we group them by what they mean for food safety. Higher-risk findings are the ones inspectors treat as critical, because they can directly make someone sick.

  • Food temperature controlHigher risk

Bacteria multiply fastest between about 4 °C and 60 °C (40 °F to 140 °F). Inspectors check that cold food stays cold, hot food stays hot, cooked food is cooled quickly, and that staff have accurate thermometers. Temperature problems are one of the most common causes of food poisoning, so these are treated as critical findings.

Recorded once on October 5, 2026. For example: Are food temperatures during storage and processing being controlled to maximize food safety?

  • Cleaning and sanitizingHigher risk

Anything that touches food, such as cutting boards, dishes and utensils, must be washed, rinsed and sanitized. Inspectors check dishwasher temperatures, sanitizer strength and how wiping cloths are stored. Poor sanitizing lets bacteria survive from one use to the next.

Recorded once on October 5, 2026. For example: Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?

  • PestsHigher risk

Signs of mice, rats, cockroaches or flies, or gaps and clutter that let them get in or hide. Pests carry bacteria and can contaminate food and surfaces, so evidence of activity is treated seriously and usually triggers a follow-up visit.

Recorded once on October 5, 2026. For example: Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?

  • Food safety training and certificationLower risk

Most jurisdictions require a certified food handler or manager on site, and some require allergen or food-worker training. These findings mean the paperwork or the trained person was missing at the time. They do not by themselves mean food was handled unsafely.

Recorded once on October 5, 2026. For example: Do food handlers refrain from handling food while ill and have acceptable attire and hygiene?

  • Building, plumbing and upkeepLower risk

Floors, walls and ceilings must be smooth and clean, with working lighting, ventilation, plumbing, hot and cold water, and washrooms. These are rarely an immediate food-safety risk on their own, but persistent problems can lead to pest or sanitation issues.

Recorded once on October 5, 2026. For example: Is the facility maintained in a clean and sanitary condition?

    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • 1. Ice bath solution for butters and cheese measured 16C. This was due to the containers sitting on top of the ice. Changed to have containers in ice water where the containers are at least partially submerged along the side to lower temperature. Re-measured at 7C after changes.2. Soups placed in ice bath for rapid cooling. Noticed full containers being cooled. Reduce container side to half to promote more rapid cooling. 3. Frozen pork sitting at room temperature. Still in a frozen state. Facility removed these and placed in freezer prior to any consultation indicating that they were just delivered to the site. Temperature monitoring program in place. Temperatures noted include:Walk-in cooler 3.5C.Walk-in freezer -15C.West prep cooler initially measured 6C with infrared thermometer. Measured 2.5C with probe thermometer. Side cooler measured 4.1C with infrared thermometer. Hot holding table measure 67C with infrared thermometer. Side cooler measured 3.8C.East prep table measured 4C.Bar coolers measured 3.8 and 3.7C.Cooked turkey rapidly portioned and then placed in freezer.
