- Observation (CORRECTED DURING INSPECTION): Main line cooler with meats was 46F inside tuna. Temperature logs from this morning showed it was at 36F. Staff used steel coloured probe thermometer which displayed 47-48F in tuna. All potentially hazardous foods must be maintained at 40F or less at all times.
- Corrective Action(s): Unit adjusted during inspection and came down to 40F. Check and calibrate thermometers to ensure that accurate readings are being made by thermometers. Due: today.
- To check thermometer a mixture of half ice with half water can be used and the temperature should read 32F when ice is stirred with thermometer and reading has stabilized on display.
