      • The booth was mixing and preparing pasta for an event longer than 3 days. At minimum a mobile 2-compartment sink is required in the booth. Only a temporary handwashing station was available in the booth. - Install a mobile 2-compartment sink in the food booth.***OUTSTANDING. 2 COMPARTMENT HANDWASHING SINK WAS OBSERVED.

    • 06. Do food handlers ensure that food is properly handled in a manner that makes it safe to eat?
      • Alfredo pasta was being mixed in a wheel of parm cheese at room temperature during the inspection.- Food handling practice has not been reviewed and approved by an Executive Officer prior to being carried out. Alfredo pasta was no longer being mixed in the wheel of parm cheese by the end of the inspection. The parm cheese was placed in a refrigeration unit at 4C. Further information required before this activity is permitted.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • The hot plate and pan used for the alfredo pasta and the wheel of parm used to mix the pasta was within 1 meter of the public.- Food handling areas to be over 1 meter away or sneeze guard/barrier installed. Staff moved the food preparation table over 1 meter back from the public during the inspection.

      • There was no accessible handwashing sink at the time of inspection. Food handling was occurring.- A temporary handwashing station was set up during the inspection.
