      • Operator was required to have many utensils as their access to a sink was limited. One pair of tongs and a flipper was onsite initially. It was require more were onsite before commencing cooking.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • 1. Pre-cooked frozen meat products were thawing at room temperature. Ensure all meat products are thawed in a cooler or cold running water. 2. Operator did not have a cooler or ice.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Operator did not have hand soap initially.
