    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • There was no probe thermometer for measuring the food temp. Operator will make soup as well and had hot holding for soup. Please make sure probe thermometer is available.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • There were no test papers for bleach water solution (Chlorine test strips) and sushi rice (PH test strips) available onsite. Please make sure test strips are available for measuring the concentration of the bleach water solution and Sushi rice Ph .
