      • The internal temperatures of foods stored in the top section of the preparation cooler were measured at 8.3 degrees Celsius. The temperature was measured at 2 degrees Celsius. The high temperature at the top is likely due to the heat lamps in this area. - All perishable foods under refrigeration must be stored at a temperature 4C or less. - Advised staff to use the heat lamps above the steam table to maintain temperature in the preparation cooler.
