    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The air temperature ranged from 6 to 8C. The fridge consisted of mostly child lunches so I did not check the food temperature.They are logging the fridge temperature. With every single temperature recorded being 3C. Nisha showed me that they were reading the temperature from the inner fridge wall, which read 3C at the time of inspection. Uncertain but this might be fridge temperature setting and not the actual temperature. For your temperature logging use your calibrated thermometer to measure the fridge temperature.

    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • -There was a 3-compartment sink and a commercial dishwasher available for sanitizing dishes. The commercial washer was not reaching sanitizing temperatures after several cycles. Discussed the 3-compartment sink method with the operator. Please ensure the commercial washer is repaired.

      • -The fridge in the Baby Room was measured at 8C, which is too warm. Pleas ensure the fridge is maintained at 4C or less.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • -There was a 3-compartment sink and a commercial dishwasher available for sanitizing dishes. The commercial washer was not reaching sanitizing temperatures after several cycles. Discussed the 3-compartment sink method with the operator. Please ensure the commercial washer is repaired.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • -The ventilation fan over the stove was visibly unclean and the protective liner had not been removed. Please ensure the liner is removed and the parts of the vent are cleaned.
