- - A sanitize step was not being done for dishes/ utensils/ equipment that were being manually diswashed.- Dishwasher measured 69C with a probe thermometer at plate level. The manual rinse gauge did read >180F.Ensure wash, rinse and sanitize for 2 min is done for manual dishwashing. Owner said she would get the dishwasher serviced and until then a manual sanitize step would be done.
