      • Observed staff washing utensils in the two-compartment sink in the front area. No sanitizing step performed. Proper two-compartment manual dishwashing involves the following: 1. Wash and rinse in the first compartment. 2. Sanitize in the second compartment by submerging the utensils in the 100ppm of chlorine or 200ppm of quats for at least 2 minutes. 3. Store on a drying rack to airdry before use. Before the beginning of operations, fill the second compartment with either 100ppm of chlorine or 200ppm of quats or store utensils in a sanitizer solution of 100ppm of chlorine or 200ppm of quats and regularly test and change the solution.The operator sanitized the utensils at the time of the inspection.

No thermometer available to check the temperature of the high temperature dishwasher.-Ensure that thermometers are available to check for the dishwasher temperature.

      • There is a gap on the right bottom side of the back exit door. The facility must be structurally sound to prevent the entry of pests. Repair or replace the weatherstripping.
