- Observed staff washing utensils in the two-compartment sink in the front area. No sanitizing step performed. Proper two-compartment manual dishwashing involves the following: 1. Wash and rinse in the first compartment. 2. Sanitize in the second compartment by submerging the utensils in the 100ppm of chlorine or 200ppm of quats for at least 2 minutes. 3. Store on a drying rack to airdry before use. Before the beginning of operations, fill the second compartment with either 100ppm of chlorine or 200ppm of quats or store utensils in a sanitizer solution of 100ppm of chlorine or 200ppm of quats and regularly test and change the solution.The operator sanitized the utensils at the time of the inspection.
