      • Observation (CORRECTED DURING INSPECTION): No food contact surface sanitizer available for dispensing into the low temperature dishwasher at the time of inspection. The chlorine sanitizer bottle is observed to be empty.
      • Corrective Action(s): Use alternate dishwashing method using the three compartment sink. Fill the third compartment with 200 ppm QUATs sanitizer and sanitize all utensils/food contact surfaces manually after running the utensils/food contact surfaces in the dishwasher. The chlorine sanitizer solution will be delivered tomorrow morning.
