      • Operator indicated that staff members chew gum while on shift. Please refrain from chewing gum or consuming any foods while handling food. Gum or saliva can accidentally fall into foods being prepared. Discussed this with operator.

      • The soups were measured to be 40°C in the hot holding units. Staff was instructed to reheat the soups to a rolling boil on the grill before transferring back to the hot holding units. Ensure proper reheating of foods is done and hot holding is at least 60°C.

      • Leftover rice was being reheated in the rice cooker using the warm function. The temperature of the rice measured 20°C after 2 hours of warming. The rice was discarded. Ensure reheating is done rapidly to kill foodborne disease organisms and hot holding is held at 60°C or higher.

      • A rice paddle was observed to be dirty with grime stuck on it. The paddle was immediately put aside for washing and was not used for food handling.

      • Some dirt buildup was observed along the grooves of the ice machine door cover and along the inside of the ice machine. A sticker located inside the ice machine was also observed to be peeling. Soem grime and dirt build up was also observed on the can opener. Clean the above mentioned areas and remove the sticker in the ice machine to prevent contamination of the ice.

      • Some food debris build up was observed under the cooking equipment. Spillage was also observed along the walls and corners of the walk-in cooler. Clean the above mentioned areas.
