- Pies in the walk- in freezer are uncovered. All food being stored shall be covered to prevent cross contamination. The pies shall be covered when being stored.
- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- The display case is at 12C. Please monitor the case for an hour, and if the case does not cool down, all high-risk foods shall be removed.
- 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
- The meat slicer has food debris present under the grinding stone cover, and behind the blade. The slicer requires more in-depth cleaning, removing the guards to get to the hard-to-reach areas. The meat slicer shall be cleaned and sanitized before use.
