- 1. Cafe behind counter area did not have sanitizer. 2. There were several wet cloths on the counters in the cafe area include used on the espresso machine. Ensure a 200 ppm quat solution is available at all times. Ensure wet cloths are placed in a sanitizing solution when not in use.

- Baking sheet with equipment on top was stored on top of the garbage can. CDI.

- Several utensils and equipment were in poor condition (wooden spoons, metal baskets, plastic storage bins, etc). Ensure these are discarded.

- Build up of debris on dry storage bins in bakery area. Ensure this area is cleaned.

- 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
- Cleaning cloths in use were placed directly on counters in the Argyle and East kitchen. No sanitizer was prepared for use in the East kitchen. As discussed, ensure that all cleaning cloths are stored in a container of sanitizer when in use, and provide each kitchen area with a spray bottle or container of quats sanitizer when the kitchen is in use.

- Presense of fruit flies was noticed in the McCullough bar. Ensure that the pest presense is removed by covering garbge, removing all food waste and cleaning the area. Consult the pest control service staff if the issue persists or if traps are needed.
