      • Observation(s): Please provide test strips for verifying the concentration of Quaternary Ammonia hard surface sanitizer. Please ensure that quats solutions are changed frequently and maintained with enough solution in the bucket to support 1 cotton cloth and a concentration of 200-300ppm (note that microfiber cloths are recommended for use with quaternary ammonia sanitizer). Please re-calibrate the kitchen dishwasher final rinse chlorine concentration to between 50-100ppm (note that 200ppm chlorine was measured at the time of inspection).

      • Observation(s): Daily temperature monitoring records were not being consistently maintained/incomplete. Tests strips were not available/not in use for testing Quaternary Ammonia hard surface sanitizer solutions or for testing the dishwasher final rinse chlorine concentration.

    • F1.4 - Are proper refrigeration, freezing and thawing procedures followed?
      • Observation(s): Freezer observed at approx. -2deg.C with unfrozen water droplets showing on some food. Freezer had a large volume of food in storage which may be preventing adequate air circulation. Main kitchen freezer and one kitchen refrigerator did not have a thermometer inside. Bacon observed thawing on top of kitchen grill on low heat with a food temperature measured between 25-38deg.C

      • Observation(s): Both ready to eat food and raw meat observed in storage on the bottom shelf within the right side refrigerator and in too close of proximity to prevent possible cross-contamination.

      • Observation(s): Final rinse Chlorine sanitizer concentration measured at 0ppm at the time of inspection - It was determined that the sanitizer jug was empty and needed to be changed. No test strips were available/in use as previously requested.
