      • Observation (CORRECTED DURING INSPECTION): At the time of inspection low temperature dishwasher detergent and sanitizer lines drawing incorrect liquids resulting in 0ppm chlorine during the final rinse cycle. Lines swapped but chlorine concentration still 0ppm.
      • Corrective Action(s): Instructed staff to replace sanitizer bucket. 50ppm chlorine detected at the plate level during the final rinse cycle. Obtain reactionary test strips to verify chlorine concentration.

      • Corrective Action(s): Reheat rice rapidly using the oven or microwave. Check internal food product temperature and ensure at or above 74 degrees C. Staff reheated the rice in the oven.

      • Corrective Action(s): Do not store knives in this manner. Store all knives on a clean magnetic knife rack or in the clean tray. Store all utensils in a sanitary manner at all times.

      • Corrective Action(s): In the interim staff placed napkins for drying hands at the kitchen hand sinks. Liquid soap provided at the back area preparation hand sink. Do not use sanitizer gel. Ensure all hand sinks are provided with liquid soap and paper towels.
