- 1. If knives are stored in water, store in ice water (4 C or colder) and change when ice has melted or about every 30 minutes.
- 2. Knives, utensils, and cutting boards are to be washed, rinsed, sanitized, and air dried every 4 hours if used throughout the day.
- 3. Make a fresh solution of sanitizer daily (100-200ppm chlorine or 1 tsp bleach in 1 liter of water). This can be in a spray bottle or also in a bucket to sanitize the wiping cloths (Corrected - now 200ppm in bucket and spray bottle).
- 4. When cleaning the ice machine, clean the inside ceiling as well.

- Observation (CORRECTED DURING INSPECTION): Lid covering container that holds hot gravy (in crock pot) is dirty (a lot of food debris noted on lid). Prep coolers on the hot (cook) line and the two door salad prep cooler require cleaning. The left side cook prep cooler has water accumulating in the bottom and the two door salad prep cooler has a lot of food debris on the shelves and at the back, inside area of the cooler. There is a small amount of black residue on the ceiling and side walls of the ice machine.
- Corrective Action(s): Gravy was moved to another container and lid and container were washed and sanitized in the dishwasher. Line coolers were cleaned by staff during the inspection. Clean and sanitize ice machine (including the ceiling) more frequently and also clean line coolers more frequently.

For low temperature dishwashers using chlorine, 50ppm chlorine must be detected on the dishes after the final rinse. Provide test strips and check chlorine concentration daily.
