      • Observation: Undercounter cooler w/ label " For shell eggs only" (currently empty) is currently at 11 degrees Celsius.
      • Corrective Action(s): Shell eggs must be held at temperatures of 4 degrees Celsius or lower to maintain food safety.
      • *Monitor the unit to determine rule out temporary reasons for elevated temperature (ie. defrost cycle, and/or door left open)
      • *If temperature in the unit doesn't return to 4 degrees Celsius (or less) within the next hour, discontinue use and contact a repair technician to assess and repair the unit.
