      • Observation (CORRECTED DURING INSPECTION): Improper chemical stored in the food contact surface sanitizer spray bottle. Staff were using a surface cleaner and disinfectant.
      • Corrective Action(s): Staff replaced the chemical to a QUATs-based solution that registered at 200 ppm QUATs.

      • Dishwasher not reaching required final rinse temperature.
      • Final rinse temp at dish level only reached 49-51 deg C
      • (acceptable minimum at dish level is 71 deg C)
      • Corrective Action(s): All dishwares (cooking utensils, containers, pots, etc.)
      • to be sanitized manually on the dishwashing compartment
      • sinks usingquats at 200 ppm until dishwasher is repaired.
      • All foods are usually served in take out containers.
      • There are no re-usable dishes for customers.

      • manual washing - 3 compartment sink set up. Quats sanitizer measured at 200 ppm.
      • Dishwasher scheduled for servicing this weekend.
