      • Observation (CORRECTED DURING INSPECTION): Cooked chicken was stored at room temperature. Internal temperature registered at 35 deg C. Staff stated that the chicken was cooked and placed outside for 1 hour.
      • Corrective Action(s): Staff transferred the chicken to the working walk-in cooler. Ensure that cooling time and temperature procedures are followed accurately (i.e max 2 hours to cool from 60 - 20 deg C, and max 4 additional hours to cool from 20 - 4 deg C.)

      • Observation (CORRECTED DURING INSPECTION): 1) Low temperature dishwasher was not able to dispense minimum 50 ppm chlorine on plate surface during final rinse cycle.
      • 2) No food contact surface sanitizer with adequate concentration available onsite.
      • Corrective Action(s): 1) Staff created food contact surface sanitizer solution (registering 100 ppm chlorine) in one compartment of the two compartment sink. All dishes that were washed today are to be washed, rinsed in the dishwasher and sanitized in the 100 ppm chlorine solution for a minimum of 2 minute contact time and then air dried. Continue with this set up until the dishwasher can be serviced or repaired.
      • 2) Staff created food contact surface sanitizer solution that registered at 100 ppm chlorine and filled the spray bottles with this solution.

      • Corrective Action(s): 1) Service, repair, adjust the dishwasher, source dispenser, and prep insert cooler unit such that it can maintain minimum required concentrations for adequate dishwashing, food contact surface sanitation, and cold food storage (as per the above noted levels).
      • 2) Do not store more than a 2 hour supply of food supply in the prep insert cooler unit.
