- Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher not able to dispense minimum 50 ppm chlorine on plate surface during final rinse cycle.
- Corrective Action(s): - All dishes and utensils that were run through the dishwasher today are to be washed, rinsed, sanitized, and air dried again.
- - One compartment of the three compartment sink was filled with 200 ppm QUAT solution.
- - Temporarily, facility may use the dishwasher to wash and rinse dishes and utensils and use the 200 ppm QUAT solution from three compartment sink for the final sanitizing step. Ensure that dishes and utensils are fully submerged in solution for minimum 2 minutes. Then air dry.
