- Observation (CORRECTED DURING INSPECTION): 1) Low temperature dishwasher was not able to dispense minimum 50 ppm chlorine on plate surface during final rinse cycle.
- 2) No food contact surface sanitizer with adequate concentration available onsite.
- Corrective Action(s): 1) Staff created food contact surface sanitizer solution (registering 100 ppm chlorine) in one compartment of the two compartment sink. All dishes that were washed today are to be washed, rinsed in the dishwasher and sanitized in the 100 ppm chlorine solution for a minimum of 2 minute contact time and then air dried. Continue with this set up until the dishwasher can be serviced or repaired.
- 2) Staff created food contact surface sanitizer solution that registered at 100 ppm chlorine and filled the spray bottles with this solution.
