      • Low temperature dishwasher had [Cl2] of 0ppm. The dishes are not being sanitized to kill germs.
      • Corrective Action(s):
      • - Immediately stop using the dishwasher to sanitize dishes.
      • - Manually wash and sanitize dishes in the 3-compartment sink.
      • - Call Ecolab to service and fix the dishwasher so the [Cl2] is 50ppm.
      • - Check the [Cl2] every morning PRIOR to using the dishwasher, to ensure it is working correctly.
      • ***Correction date: Immediately**
      • During the inspection, staff starting manually washing and sanitizing dishes, and Ecolab was contacted.

      • Observation:
      • The u/c cooler below the flat grill was 11C still. As an interim, staff are only holding perishable foods for 2 hours and then discarded. The u/c cooler shall maintain food at 4C or colder at all times to prevent bacterial growth. This problem has been present since July 2024.
      • Corrective Action(s):
      • Repair or replace the cooler unit so that it can maintain 4C or colder at all times. Continue to hold food for 2 hours ONLY, and then discard.
