    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Staff are rinsing soapy dishes in the sanitizing sink. Ensure that staff follow the proper 2-compartment sink method and rinse dishes under the tap or by refilling the wash sink with clean water. In addition, if a 3-compartment sink is installed, it is recommended to follow the 3-compartment sink method rather than leaving one sink unused.
    • 20. Do food handlers at the facility have adequate food safety training?
      • Staff are recording hot holding temperatures below 60°C in their temperature logs but are neither reporting this to management nor taking any action to address the issue. Staff must be aware of the proper safe temperatures and are required to report any instances of improper hot holding.
