      • Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher unable to produce sanitizing concentration even after multiple cycles. Chlorine measure <10ppm according to test strip.
      • Corrective Action(s): All dishes/utensils/equipment/tools must now be manually sanitized at the three compartment sink and then air dried.
      • Items may be manually washed or washed by the dishwasher. But MUST go through the sanitizer soak step at the three compartment sink. The third compartment must always be filled with 100ppm chlorine when food handling/preparations occurs.
      • This must be done until technician have fixes the dishwasher.

      • Observation: 1. Double stacking observed at the insert level bottom container has no lid/cover
      • 2. Multiple containers of food in freezer and coolers are uncovered.
      • Corrective Action(s): 1. Do not double stack containers of food without lids/covers. Bottom of top container may contaminate food that it touches on the bottom container. Double stacking at the insert level may also prevent proper air circulation that keeps the cooler cold.
      • 2. All food that is not in active use (in freezer and stand up cooler) must be covered to prevent contamination.

      • Corrective Action(s): 1 &2 :Adjust the temperature or repair so that coolers are able to maintain a temperature of 4 C or below.
      • Operator called a mechanic at the time of the inspection.
      • 3. Ensure sink is draining properly. Correct immediately.

      • Corrective Action(s): 1. All chemicals must list have their ingredients listed and all sanitizers should also have instructions on how to use. Refer this to the manufacturer/supplier.
      • 2. All chemicals and cleaners are to be stored underneath food or away from food. Lysol bottles were re-located to the bottom shelf. This is to protect food from chemical contamination.

      • Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher registered at 0 ppm for chlorine during final rinse.
      • Corrective Action(s): The low temperature dishwasher must be dispensing 50 ppm chlorine during the final rinse in order to effectively sanitize dishes. In the interim, dishes can be washed using the dishwasher but must be sanitized manually. Discussed with operator on how to do this and provided a dishwashing poster.

      • Corrective Action(s): Operator placed paper towel by sink. Paper towel must be in a dispenser.
      • Can use a table top dispenser or mount a dispenser on the wall close to the soap dispenser.
      • Correct by June 1, 2022.

      • Store raw meats at the bottom shelf or in a seperate cooler. Place lids on all foods.
