    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • A chlorine solution measured 50 ppm and there was soap in the mixture.Ensure chlorine solutions are maintained at 100-200 ppm. Do not add soap or any other chemical to bleach solutions.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The mini-fridge outside measured 10C and the door was slightly crooked and not properly sealed.Dairy products were removed from the cooler and placed on ice inside the unit.Repair or replace the unit; it must be capable of maintaining high risk food at 4C or less.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • There was a vial of chlorine test strips; however, it appeared the strips got wet as they were black and not able to be used to measure chlorine concentration.Strips were discarded and inspector left a few strips onsite.Obtain new test strips and store where they are protected from contamination.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • There were cleaning cloths and a spoon inside the handwashing sink, rendering it inaccessible.Keep the handwashing sink free and clear at all times to facilitate handwashing.Items were removed from sink during inspection.

      • Observed the freshly cut lemons in a container.Cut lemons need to be held at 4 C or less. It was determined that these lemons were cut this morning. Corrected by placing cut lemons into crushed ice to cool.
