    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • Butter for batter dough was stored in an open container on the preparation counter - operator indicated that this portion of butter would be used within 2 hours as dough preparation was a constant activity in the booth requiring softened butter. A cover is required to prevent contamination - a lid was obtained during the inspection.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Strawberry syrups with manufacture instructions to refrigerate after opening were stored on the service counter - operator indicated that the syrups were stored in the refrigerator outside of service hours however this is contrary to the manufacture instructions. A larger bin with ice was obtained for storage of the syrups during operations - ensure the ice is refreshed as needed.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • A significantly broken (chipped, cracked, missing pieces) lid was stored ready for use in an empty/clean food storage container. All food storage containers/lids must be in good working order and easily cleanable. Discussed condition of lid with booth operators and event organizer Debbie - lid was discarded during the inspection and a replacement to be ordered/sourced.

    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • A large tub of margarine specifying "keep refrigerated" was found at ambient temperature.Another container of margarine was on the counter.The large tub was placed into the reefer trailer and the operators were advised to put the smaller container on ice.Ensure label directions for food storage are followed.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • The paper towel for drying hands was in a hard to reach corner.Paper towel was moved closer to the sink where it was more easily accessible.Ensure the handwashing sink and all the supplies for handwashing are easily accessible at all times.

      • Expired chlorine test strips (April 1, 2025) were used to measure sanitizer concentration. New test strips were acquired during the inspection. Ensure staff have access to appropriate tests trips to measure sanitizer concentrations.
