    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Dishwasher tested at 0 ppm chlorine initially. After adjustments, it measured >200 ppm chlorine. A further adjustment by the manager resulted in a final reading of 150 ppm chlorine. Operator will contact a technician to repair the unit so it consistently maintains required sanitizer levels. Chlorine test strips are needed.

      • The dishwasher measured 0 ppm chlorine at the start of the inspection. The manager was able to troubleshoot the issue, and the dishwasher measured 100 ppm. Please ensure your dishwasher is repaired if needed.

      • There is food splatter and debris on some walls, under the fridge and freezer, and on counters. The kitchen needs a deep cleaning.

      • There was a buildup of grease, dust/dirt and debris on the pots and pans and trays next to the stove as well as the wall behind the stove and floor around it.Please clean these areas.

      • The bottle of chlorine sanitizer for the dishwasher was empty. Facility will go to manual dishwashing procedures until more sanitizer can be purchased. Note: manager indicated he would go and buy some right after the inspection.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Utensils stored in the drawer near the handsink were dirty. The drawer had an accumulation of grease on and in it. Chunks of dried food were also noted in the drawer with the food equipment/utensils.Clean the drawer and utensils. Ensure that this area kept clean.

      • The dishwasher was dispensing chlorine at 50 ppm. Please have the dishwasher checked and adjusted so that it dispenses at least 100 ppm chlorine.

      • There are no test strips or method in place of monitoring the chlorine concentration of the dishwasher.Please obtain test strips and monitor the dishwasher on a regular basis.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Utensils stored in the drawer near the handsink were dirty. The drawer had an accumulation of grease on and in it. Chunks of dried food were also noted in the drawer with the food equipment/utensils.Clean the drawer and utensils. Ensure that this area kept clean.

      • The flooring along the shelves and cupboards by the hand sink and underneath the two compartment sink and along the wall by the freezer and stove had been cleaned and looked much better. Please continue to clean these areas on a regular consistent basis. There was a buildup of grease, dust/dirt and debris on the pots and pans and trays next to the stove as well as the wall behind the stove and floor around it.Please clean these areas.
