- Observation (CORRECTED DURING INSPECTION): 1) The sanitizer bucket near the cooking station only had water inside. Also, wipes were seen on the table and not dispensed in the sanitizer solution.
- 2) The glass dishwasher was not dispensing any sanitizer at the time of inspection.
- Corrective Action(s): 1) Fill the sanitizer buckets with 200-400ppm Quats to adequately sanitize food contact surfaces. Also, when wipes are not being used they should be dispensed in the sanitizer solution so that any pathogens on the wipes can be destroyed. Do not leave anywhere but the sanitizer bucket when not in use.
- 2) The glass dishwasher was sanitizer motor was primed and was then dispensing 12.5 ppm Iodine. Speak to the technician about this when he is in, and make sure to prime the dishwasher if the concentration of Iodine is too low or zero.
