- The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. MUST CLEAN IN DETAIL THE FLOOR ALONG THE WALL BASE AND ALL CORNER UNDER THE WIRE RACK SHELVINGS INSIDE THE WALK IN COOLER, WALK IN FREEZER, BEHIND THE DONUT CASE, BEHIND THE OVEN, BEHIND THE COFFEE AND CHOCOLATE MACHINE, BEHIND THE ICE MACHINE, UNDER ALL THE DRY STORAGE SHELVINGS IN THE REAR AREA.
- 40. REFRIGERATION AND METAL STEM THERMOMETERS PROVIDED AND CONSPICUOUS
- All food establishments that display, prepare, or store potentially hazardous foods shall have calibrated metal stem thermometers, provided and conspicuous, for refrigerated and hot food units. NEED TO PROVIDE THERMOMETER IN THE PREP COOLERS AND MUST BE VISIBLE.
