OBSERVED SHREDDED CARROTS BEING THAWED IN FRONT SUSHI PREP EXPOSED HAND WASHING SINK AND DIRTY GLASS WARE ALSO INSIDE SAME SINK AT SAME TIME. INSTRUCTED MANAGEMENT THAT EXPOSED HAND WASHING SINKS ARE FOR HAND WASHING ONLY. FOOD AND DISHES REMOVED.

      • Equipment and utensils should get proper exposure to the sanitizing solution during the rinse cycle. Bactericidal treatment shall consist of exposure of all dish and utensil surfaces to a rinse of clean water at a temperature of not less than 180F. OBSERVED CERTIFIED MANAGER WASHING DIRTY DISHES IMPROPERLY AT THREE COMPARTMENT SINK WITH OUT ANY SINKS BEING FILLED AND NO SANITIZING FINAL RINSE. CERTIFIED MANAGER WAS UNABLE TO SAY WHAT IS TO BE USED TO SANITIZE OR ABLE TO DEMONSTRATE THE PROPER WAY TO WASH RINSE AND SANITIZE. I FOUND BLEACH ON PREMISES AND DEMONSTRATED THE PROPER METHOD.
