      • Observation (CORRECTED DURING INSPECTION): Only 1 sink plug was available at the 3 compartment sink. As mention before, in accordance to the 3-compartment wash/rinse/and sanitize method for ware washing, sink plug are required so that each compartment can be filled at the same time and to ensure adequate contact time is achieved.

      • Observation (CORRECTED DURING INSPECTION): Prepackaged 2%, 10%, & 18% creamers for coffee were kept at room temperature. As noted on the packing, these products need to be "keep refrigerated." Food products were discarded. Ensure dairy products are kept less than or equal to 4C.

      • Observation (CORRECTED DURING INSPECTION): Inadequate sink plugs were available for 3-compartment sink. Sink plugs were misplaced and staff member had to search for the plugs. The one plug being used was wrapped with plastic, which was inadequate to allow water to fill up within the sinks. As the final sanitizing step for manual ware washing, equipment need to be fully submerged and a proper 2 minute contact time of 2 minutes need to be achieved. This cannot be accomplished the sinks cannot be adequately filled.

      • Observation (CORRECTED DURING INSPECTION): Ambient air temperature in the meatballs and pizza case was only at 43C. Internal temperature of the following food products were noted:
      • - 2 tray of meatballs between 43C to 48C.
      • - Deep fried chicken wings 48C.
      • - Sweat and sour balls: 55C.
      • - Pizza at 55C.
      • Hot food items are cooked and discarded on a time system. Meatballs have a 2 hour shelf life and pizza products have a 1 hour shelf life. Food products were discarded as they were passed the 2 hour holding period.
      • Ensure the finished cooked time is recorded as not all food products are cooked at the same time.

      • Observation (CORRECTED DURING INSPECTION): Pizza rollers were stored in a container of Quats sanitizer. There is potential of chemical contamination since the utensils are not properly air dried. If food utensils are going to be continuously used and stored at room temperature, they should be stored in a container of ice and washed and sanitized every 2 hours.
