- Observation (CORRECTED DURING INSPECTION): Internal temperature of cooked rice in hot holding unit recorded at 53.6C. Staff stated that rice was cooked last night and reheated in the rice cooker/warmer. Time temperature verified (less than 2 hours in danger zone). Staff reheated half portion of cooked rice to internal temperature of 74C and hot held at least 60C for lunch rush. Second half was voluntarily discarded by staff during inspection.
- Corrective Action(s): Please ensure that hot potentially hazardous are hot held at or above 60C to prevent risk of bacterial growth or toxin production.
- Potentially hazardous food must be reheated to at least 74C prior to hot holding.

- Observation (CORRECTED DURING INSPECTION): 1. Small bags of lettuce were stored near the hand washing station, underneath the liquid soap dispenser.
- 2. A bulk food scoop was stored improperly. Scoop handle was in direct contact with the bulk food.
- 3. Serving utensils (tongs, rice scoops, etc.) were stored in ice water but the amount of ice water was too little. The food contact portion of the utensils was only partially submerged the in the ice water.
- Corrective Action(s): 1. Move the bags of lettuce away from the liquid soap dispenser. Ensure food is not stored near the hand washing station to avoid potential contamination.
- 2. Store the bulk food scoop in the dedicated scoop holder.
- 3. Ensure there is enough ice water for the food contact portion of the utensils to be fully submerged.
