      • Corrective Action(s): Ensure that taquitos are reheated to 74 degC (165 degF) and then placed above 60 degC (140 degF).

      • Observation: About 4 plastic containers (with holes at the bottom) that are too large to fit in any of the compartments of the 3-compartment sink are still on-site. Two were clearly still being used.
      • Corrective Action(s): This issue was coded on the last report. REMOVE ALL CONTAINERS that are too large to fit in the 3-compartment sink. Do Not store these on-site at all.

      • Observation (CORRECTED DURING INSPECTION): The hot food warmer was at 127degF. The jamaican patty was at 63 degC and chicken wings were at 70 degC. These were moved into the other warmer. The meatballs were at 47 degC and pizza at 55 degC. These were discarded.
      • Corrective Action(s): Get the warmer fixed. Do not use this warmer until it has been fixed and can maintain a temperature of at least 60 degC.

      • Observation: Sauces for the chicken wings are kept in their original packaging with the plastic cover peeled back. There is no cover provided for the package.
      • Corrective Action(s): Store sauces in containers with proper lids. Wash the containers regularly.

      • Observation: The 2 large metal pans cannot be used at this location since they cannot fit into the sink compartments for cleaning.
      • Corrective Action(s): Remove all pans that do not fit in the sink compartments. The only exception being the chicken breading bin, which must be flipped during washing/sanitizing as discussed.

      • Observation: The potatoes are no longer being sliced on-site. The potato slicer is therefore not required any more.
      • Corrective Action(s): Remove the slicer from the premises.

      • Observation (CORRECTED DURING INSPECTION): As per manager on duty, the grilled foods (e.g. hotdogs and taquitoes) are being reheated to 140 degF and held at that temperature. This is not correct.
      • Corrective Action(s): The grilled foods must be reheated to 165 degF (74 degC) then held at 140 degF (60 degC). Both the temperature dials for the back and front rollers were set at "warm". Refer to your Food Safety Procedures and follow those instructions. Educate all the staff as discussed. Manager discarded all the food items that were on the "holding" side of the grill.

      • Observation: Rodent droppings observed under and behind the upright freezers in the back room. A container of ice-cream found melted under one of the freezers.
      • Corrective Action(s): Wheel the freezers out since they're on wheels, and clean under and behind them.

      • Observation: Operator is using large containers to store and wash raw chicken. These containers do not fully fit inside the single compartment sink that's used for washing raw chicken or any of the compartments of the 3-compartment sink. As discussed when the store was initially opened, any dishes used for the operation of the store that requires washing/sanitizing MUST be able to fully fit inside one of the compartments of the 3-compartment sink (with the exception of the breading bin). Remove all the larger pans and replace them with the smaller ones you had before.

      • Observation: Assistant Mgr did not have Foodsafe level 1 certification. The staff on duty couldn't prove that she had taken the course.
      • Corrective Action(s): There has to be at least one staff on-site at all times that has FS level 1 certification. All the managers and assistant managers should be certified.
