      • 2) Vegetable cooler is at 14 degC. Mostly non-PHF's are being stored in this cooler. The bottom bins and base are broken or have cracks in them.
      • Corrective Action(s): 1) Replace the both paper towel holders with ones that work.
      • 2) Replace the cooler. DO NOT STORE POTENTIALLY HAZARDOUS FOODS IN THIS COOLER. MOVE ALL CUT VEGETABLES INTO ANOTHER COOLER.

      • 2) A broken lid is being used to cover the sushi rice
      • Corrective Action(s): 1)If the temperature of the cooler doesn't drop to 4 degC, get it fixed. Replace if required.
      • 2) Discard containers/lids that are broken. Purchase new ones.
