- Corrective Action(s): Operator discarded both tubs of cheese. Only fill in small amount of cheese in the prep cooler so that it is able to be used up in 2 hours until the prep cooler has been repaired or replaced.

- Observation: The right side of the prep cooler was at 8 degC. As per operator, the problem was fixed. But the thermostat needs to be changed.
- Corrective Action(s): Provide me with a copy of the work order for the last repair and the thermostat replacement that is scheduled for this coming weekend.

- Observation: The right hand side of the prep cooler (side closest to the front door) is not maintaining a temperature of 4 degC or below. Several meats in the inserts were probed and the temperature were recorded as follows:
- Ham @ 11 degC; Italian sausage @ 10 degC; Salami at 11 degC; Pepperoni at 10 degC; Capiccola at 10 degC.
- The temperature inside the prep cooler was 9 degC.
- Corrective Action(s): All the meats stored above 4 degC were discarded. As discussed, do not use the right side of the cooler until it has been fixed and can maintain a temperature of 4 degC or below. Move all the foods inside the cooler to the left side where the temperature is 4 degC. Since this is a repeat violation, A CORRECTION ORDER has now been issued. If this violation is coded again, you will be issued a violation ticket in the amount of $345.
