- Wet cleaning cloths stored on the counter did not contain any sanitizer solution. Cleaning cloths must be placed in a bucket with either a quat solution of 200ppm or a chlorine (bleach) solution of 100 to 200ppm to prevent the growth of bacteria. Wiping surfaces with a wet cloth can spread bacteria and further contaminate food contact surfaces.The operator placed the cleaning cloths in a bucket of chlorine sanitizer at the time of the inspection and measured 100ppm.
