- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- Two inserts of cooked rice were being held in the steam table at a temperature pf 41.1C. The inserts were sitting approximately 2-3 inches above the top of the steam table resulting in inadequate hot holding.The rice was reheated at the time of the inspection. Please ensure that appropriately sized inserts are used in the steam table and that food is always kept below the fill line to ensure adequate temperature control.
- 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
- The hand washing sink located next to the mechanical dishwasher and two-compartment sink was not stocked with paper towels at the time of the inspection. Please ensure that all hand washing sinks are also stocked with paper towels, liquid hand soap, and running hot/cold water to facilitate proper hand washing by food handlers.
- 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
- Containers were placed in the basin of the hand washing sink located next to the mechanical dishwasher and two-compartment sink by staff at the time of the inspection. Hand washing sinks are not to be obstructed and must easily be accessible by food handlers. The containers were removed at the time of the inspection.
