- Observation (CORRECTED DURING INSPECTION): Observed staff near filling 15L buckets to cool and store soup. Buckets are left out at room temperature until they cool to room temperature then put into the walk in cooler. Putting soups to cool in 15L buckets into the cooler will not cool down to under 4C (40F) in under 4 hours.
- Corrective Action(s): Implement one of the following methods to cool soups faster:
- - Put soups into shallow trays (2" or less in depth) to allow for faster cooling
- - Use ice wands or ice packs into the center of the soup once it has cooled enough to bring the center of the soup down faster
- - Put the buckets into the walk in freezer after they have cooled down substantially at room temperature until they have cooled to 4C in the middle before transferring to the walk in cooler.

Also observed the weather stripping under the office door was chewed away in corner with grease streaks from fur present. Staff stated that the pest control company comes in biweekly.
- Corrective Action(s): Clean up all mouse droppings, continue to work with pest control company and follow all their recommendations to remediate issue. Also replace weather stripping under office door to prevent movement of pests to/from this space. Due: 1 week.

- Observation: Walk in cooler at 7.7C at coldest when probed between two cartons of milk. Line cooler measured 9.4C ambient air. Chef stated that a repair person came in yesterday (July 28th - more than one week after last inspection) to look at walk in cooler but is unsure of the outcome of the visit at they did not speak to him after they left. Ambient air temperature in kitchen ranged between 33C-38C and likely adding to coolers' challenges in keeping the required 4C or less.
- Corrective Action(s): 1) Move all items from line cooler requiring refrigeration for food safety (cut fruits/vegetables, meats, dairy, etc) to a working cooler and do not use this cooler for storage of foods beyond 2 hours.
- 2) Have line cooler repaired/adjusted so that it can maintain 4C or less at all times.

- Observation: Walk in cooler and line cooler at 5.5-7C. Staff also stated that closing mechanism for walk in cooler door was recently repaired but now can get stuck and prop door open slightly, letting cold air out.
- Corrective Action(s): Have both coolers looked at/serviced by a technician tomorrow to ensure that they maintain 4C (40F) or less at all times. Also install a plastic curtain on inside of walk in cooler door to keep cold air in as both coolers are located directly across from cooking areas.

- 1) Exhaust canopy and filters had grease and dust. Service sticker stated it was to be cleaned in July 2020.
- 2) Floor beneath the cooking equipment (flat grill, chargrill, gas range) had grease.
- 3) Ceiling tiles around air diffusers had dust.
- 4) All upper walls, along the perimeter of the ceiling, had dust.

- 1) Immediately call a professional company to clean the exhaust canopy and filters.
- 2) Immediately wash and sanitize the floors. This must be done daily, especially at the end of the day to remove all food and grease.

- The ice cream scoops are were being stored in dirty, luke warm water between use. Bacteria will grow in the luke warm water and contaminate the scoops.

- Store ice cream scoops in a ice-water bath between use. Change the solution when the ice has melted, or when the solution is NOT clear, or at least every 2 hours. The cold water (temperature of a fridge) will prevent bacteria from multiplying fast. During the inspection, staff changed the storage of the scoops to an ice-water solution.
